Old school suspension upgrade ?

Hello im new to the forum. New to motorcycles.
I Just got my motorcycle license and bought my first bike, Or I should say, my first bikes.
I was gonna buy a z750 but got bit by cb bug just before buying the z.

Long story short I bought 6 bikes. 3 complete ones and 3 part bikes.

Ive decided to start with a 1974.
It need a lot of work but it is ok. I guess if I wanted to ride now I should ive got the z750.

I am working on the front end and wanted second opinion on fork settings.
What oil grade and how many cc. ?
What differences the grade does ?
I have 3 setup to chose from. The 2 below plus stock.

See pictures. I have no ideal if any of these are good. I was planning to go the race tech way but maybe I dont need to.

Second setup seems like it sit way lower.

What's your riding style? Aggressive, short twisted or start endurance highway riding?  Check out the faq area and download the manual. It will provide the proper amount of fluid and the proper length the springs should be.

You using those rear red shocks?  If not I may be interested in buying them.
