There is no grit of sandpaper(or emery/wet and dry) safe for cleaning gasket surfaces as the grit can get into the motor and destry all the bearings

Cellulose thinners or 2Gun Wash" should remove all traces of gasket, goo or otherwise, along with GENTLE scraping or scotchbrite----THEN a really good clean out

The only difference between a 500 and 550 gasket kit is the clutch cover gasket and the only difference in the seal kit is the 500 has a push rod seal where the 550 has a blanking plug.

If you are tearing it all the way down fit a new primary chain---costly but there is no tensioner and it can wear through the main oil galleries when worn.

Did it actually run with no head gasket?
