Quick throttle ?

Seems as though the bike stumbles under quick throttle pull?? Carb issue??

Yes.

I would say too lean without knowing all the details - but it could just as easily be too rich (but I find that less common).  It's the reason why people hate tuning carbs - too much or too little fuel often have common symptoms.

Do your carbs have accelerator pumps?  If not, quick full twist will make the engine stumble.  But, it should take 1/2 throttle twist and accelerate reliably.

TwoTired is right.
These old motorcycle carburetors are often a bit slow on the uptake.
