Is there any clear cut way to tell the difference? Like if you had a handful of mixed genuine and repro needle valves and wanted to put them in various bins, how would you tell?

Keihin are stamped with the name and the stylized K logo on the ones I have seen.

That looks like valve seat. What about the needle valve itself?

That's a picture of a mainjet.

The Kehin float valves have soft springs in them. The modern ones since about 2002 or so have MUCH stronger springs. They can work OK, provided you set the floats deeper when installing the new, stiffer ones. I usually set the CB750 floats, which are 26mm with Keihin's float valves, to 24.5 mm if brass or 25mm if plastic.
