hi, Im out of clovis CA and im 20 years old. im new to the forum and have recently picked up a bike id like to restore. This is my first motorcycle and ive tasked myself with the objective of trying to turn this 1978 cb750k with a 72 750 motor into a cafe style bike. I have lightly browsed the forums as a guest and am starting to find myself here more and more so ive decided to finally make an account. Ive also uploaded pictures of my bike from when i purchased it in june up to today where ive just installed the new handle bars.

Welcome aboard did the early oil tank fit up easily?
 I think you have mismatched fork legs one early one , different internals.

No i was completely puzzled putting that tank on until I did the research, I have the correct one on the way now haha. But how can you tell the forks don't match up?

2nd pic the fork lower leg has a straight section with 2 holes on backside, for brake and fender mount. Used til 1972. If the  other side does not have it, its a later fork lower leg. Your brake looks like it has a 3 bolt mount, that would be 73 and later.
