I just got addicted to my first CB750 and hadn't even heard of the CR's
I'm guessing by the fact that there are replicas out there that the odds of finding an original CR750 are pretty slim(that and I couldn't find any on ebay or craigslist). This is more just curiosity since I don't have the money for another bike right now either way, but from what I've found online the CR's are basically just a hopped up CB? Though I know to keep my eye out now if I do come across one

"just a hopped up CB" has some truth to it in that the frame and cases were the same. But it was a huge project changing virtually every part for something similar but lighter, faster, stronger, etc.
In the case of the bikes that ran at daytona, even the engine cases and frames were different. The design was the same but the materials were different and those pieces were hand built. The Kits honda sold did use a production cb750 frame and engine case. Before Vic World's site went down he had a factory pic on there of what went into a 970 kit - it was a lot of stuff and not just engine and bodywork, suspension and controls as well. Some of the kit items were:
race camshaft, stronger valve springs, oversize inlet valves and smaller exhaust valves, 2 ring 10.5:1 slipper pistons (standard is 3 ring 9:1), a close ratio gearbox and battery-less ignition fixed at 35 degrees advance. Also included were four open megaphones, rear sets, racing seat, petrol tank, aluminium oil tank, fairing, twin disks up front and a giant 240mm 2 leading shoe drum brake up back. Special camchains and primary chains were also supplied but this did not prevent numerous cam chain failures during races.
