Replacement Carbs for fun and ...

Anyone have any ideas about what make/model of carburator would make for a more fun and reliabe MC. My 78 CB550K for example. Mikunis? What? Just wondering.

More fun and reliable in what way?  Can't say I've ever found the CB550's to have much of a problem in the fuel department unless the carbs are in need of a rebuild, mechanically worn, or just not jetted right.  If the bike just doesn't match up to new bikes, then just avoid riding new bikes and pretend that the CB550 is the state of the art and be happy.  If you really need more modern carbs, then maybe look at the carbs that were fitted to the 650's, though I'm not sure they would fit or make the bike run well if they did fit.

I've seen a Holley carb/intake mod. (4 barrel) on a goldwing, perhaps somebody did something similar for smaller SOHC 4's?

The Goldwing has a flat 4 (or 6, in case of 1500cc and 1800cc engines) with the carbs on top of the engine.  It'd be a good deal easier to adapt a holley 4 bbl to that than to one of our bikes, I presume.  Still, that on a 'Wing does sound interesting  if not a bit of overkill, due to too much carb for 1000-1200 cc's.
