Inspecting clutch friction plates / swapping parts K7 & F1 to K0

I have two spare clutches one of a 750F1 and one off a K0. I intend to use one of these on my K0 as a complete unit. How do I inspect the friction plates, other than check thickness?
Would it also be wise to put the fork selectors and shift drum from the K7 or F1 into the K0, as I believe the design was improved. My K0 was purchased as a non-runner and had been unused for about 17 years.
