just get some 280 grit wet and dry paper, use it wet and sand the disc down until its steel colour, basically you can spin wheel andhold sanding pad against disc. Doing the back is a little more difficult ( dont loose a finger in the spokes

) remove caliper first. wash everyhing with clean water and your good to go. You could try fitting wetordry to old brake pads and spinning wheel but I've never had any luck with that method Turning is a real pain as the stainless gets increadibly hard and will probably havre to remove material to below minimum thickness. If you can get it surface ground its a better option but I know what I would do.
