CB750 Carbs Price

Where can I get a rack of CB750 carbs for $35? I'm being told that's all they are worth.

Oh boy.  Well, I'm assuming you mean a solid core of carbs.  Which would be IMO worth around $150.  That's just a core.  HOWEVER, it has to be a GOOD core.  Meaning, I have pictures of inside the bowls, the OEM brass all still exists, and no one has "tried" to rebuild them already which usually translates to damage or parts that need to be replaced.  No damage from improper removal/install on any intakes.  No gouges from screwdrivers on the slides where someone tried to unstick them.  I could go on but I digress.

Problem is that most people can't discriminate/assess a carb rack or what is wrong with it.

$35 definitely sounds like the person assigning the value has basically assessed it as "parts rack."

It's a rack off a running 73 CB750. I figured they would be in the $125-$150 range. I'm sure it was a typical lowball offer to see how uneducated I was.

I have bought several perfectly good racks at swap meets in that price range.  Fortunately, I knew what a great bargain that is...and the seller didn't.  Of course, if you got an old rack of cb carbs lying around and no bike to put them on they are pretty much worthless, right?  There is nothing particularly rare or "hard to get" about these carbs.
If it works good, it looks good...

I ended up taking $1200 for it because it wasn't a parts matching bike

That's not even the worse I have goten.  I was selling a volvo once and someone told me that they wold take it if I payed them
