what's the proper way to fix a stripped spark plug thread?

Use a Time-Sert or equivilent.  Don't use a Helicoil - far too often they do not stay in place (especially with spark plug threads).

Many drag racers take a perfectly good head and put timeserts into the plug threads as they are far better than new.  Napa makes a similar product - I've not used it, but I've heard it's basically the same as timeserts.

The negative with timeserts is the cost.

heli-coil makes a product just like time-sert.you drill the hole and tap it,screw in the sert and use the included staking tool and stake in place.
