vegetarians are also more likely to be calcium and iron deficient if they're women...
why don't people get the concept of 'balance' and 'moderation'?

This is more true for iron than for calcium.  An animal protein heavy diet results in heightened calcium excretion via urination.  Conversely plant protein has no corollary effect.  Net result is that vegetarians need less calcium than omnivores with a meat-rich diet.

Iron challenges can easily be overcome by cooking in cast iron and consuming lots of dark green leafy vegetables.

I was a Vegan for 12 years before I joined the circus, and could no longer cook for myself. I became sick and frail, not a good combo when you are required to climb for long hours 100 feet above the ground. Changing my diet to include some poultry and fish helped a lotand I guess I just stuck with that out of laziness since. It can be a lot of work to eat well as a Vegan/vegetarian and is necessary if you don't wanna crash and burn. Peanut butter and pasta do not a good diet make.... I was never healthier then when I was a good Veg though.
