I rode the Monument Valley road (twice - 1991 -CB750K5, 2004 -CB750 K4) and can confirm its worth it  ;)

When riding down 163 in Monument Valley, don't forget to take the little spur road to Oljato Trading Post...

This will take you around the North side of a large table top mesa.

296 in Wyoming south of the Beartooth pass.  Known as the Chief Joseph Scenic Highway.  I like this route into Yellowstone over the Beartooth as you can maintain a bit higher speed and will be less likely to get stuck behind a train of slow moving RV's.  Prettier route too. IMO.
