CB750 Engine Builds

It's beginning to look like the builder I was looking for to redo my '70 CB750 motor has other commitments, which I understand. Anybody got recommendations for a mild restomod job (836cc/cam/HD internals) to suit what I want to be my CB sport/tourer?
